Documentary/Commercial Audio: Compliance vs. Reality - Your Strategies?

As a VFX Supervisor, I often end up dealing with the consequences of tricky on-set situations, especially regarding audio. I'm hitting a wall with how to consistently ensure loudness compliance when the shoot environment is anything but controlled. The guides are great in theory, but when you're shooting a fast-paced doc with a KOMODO-X and an AMIRA, jumping between locations, or a quick-turn commercial with an Orbiter light and boom mics like the MKH 8060 and 4018, things get messy.

We often find ourselves making choices to capture the fleeting moment, which sometimes means audio falls outside the 'ideal.' We try to monitor closely with a MixPre-6 II and use Track E for syncing, but the dynamic range of unscripted moments or sudden environmental shifts can be brutal. We're often making judgment calls on the fly. How do you guys manage to hit those compliance targets without stifling the spontaneity or artistic vision? What are your practical, real-world strategies for balancing technical specs with the unpredictable nature of documentary and commercial production? Any insights on how to avoid nasty surprises in post-production would be hugely appreciated.
